Endoplasmic reticulum acids for the desaturation enzymes, ALA is usually present at much lower levels in the diet and in the tissues of the body than is LA, the primary essential fatty acid of the n-6 family usually consumed in Western diet. As a result, diets rich in foods high in LA, such as corn, safflower, sunflower, and peanut oils, and significantly low in ALA, can lead to n-3 fatty acid deficiency, as such a high ratio of n-6 to n-3 fatty acids in the diet accentuates n-3 fatty acid deficiency.
